the problem with strawberries

they don't last! i *love* strawberries... but i can only eat so many of the juicy, ripe, organic, local, succulent, red beauties before the others on the counter starts to wither, fade and become sad. i refuse to put them in the fridge... the cold does disagreeable things to texture of the flesh.

*unless* they are destined for jam, smoothies, gelatin or ice cream... then we're going to puree the flesh to oblivion so it really doesn't matter how pretty they look. 

my sad strawberries became happy strawberry-cashew "cheesecake" 



makes 6 cupcake size

crust
3 soaked dates
1/4 cup pecans or walnuts
1 tb coconut flakes

~sprinkle coconut flakes into cupcake liners (i use silicone)
~combine dates and nuts in food processor
~press into cupcake liners

filling
1 cup soaked cashews
1 tb coconut oil
1-2 tb maple syrup or honey or agave
juice from 1/2 lime
1-2 tb water

~blend all in food processor until very smooth
~start with 1 tb water, add more as needed
~start with 1 tb sweetener of choice, add more to taste
~spoon on top of crust

topping
~blend 1 basket strawberries
~spoon on top of filling
~freeze 30 min or refrigerate overnight
~will keep in fridge for 3-4 days in airtight container
